By allowing a fine young Fontina to age twice as long as usual, we find our patience doubly rewarded with a rich, deep, creamy fruitiness that only grows sweeter with time. Thanks to our patron farmers and expert cheesemakers, this new Sartori flavor has already paired successfully with red grapes, walnuts and top honors at the 2010 World Cheese Awards.
