Sartori® Classic Romano Vegetable Farro

  • 1 deli cup Sartori® Classic Romano
  • 1/2 cup pearled farro
  • 1 cup water or stock
  • Salt & pepper, to taste
  • For the Dressing:
  • 1½ tablespoon lemon juice (save zest for garnish)
  • 1 tablespoon honey
  • 1/4 cup olive oil
  • Seasonal Veggies of Choice:
  • 1/2 cup roasted beets
  • 1/2 cup chopped kale
  • 1/2 cup roasted carrots


  • Combine farro and water (or stock) in a pot. Bring to a boil, cover and reduce to a simmer until tender (about 20 mins.). Drain and cool.
  • In a small bowl whisk lemon juice and honey. Slowly whisk in the olive oil and season to taste.
  • In a large bowl, toss your roasted veggies de jour with farro, shredded Classic Romano and dressing. Season to taste. Garnish with lemon zest and extra cheese.
