Sartori® Classic Romano Vegetable Farro
- 1 deli cup Sartori® Classic Romano
- 1/2 cup pearled farro
- 1 cup water or stock
- Salt & pepper, to taste
- For the Dressing:
- 1½ tablespoon lemon juice (save zest for garnish)
- 1 tablespoon honey
- 1/4 cup olive oil
- Seasonal Veggies of Choice:
- 1/2 cup roasted beets
- 1/2 cup chopped kale
- 1/2 cup roasted carrots
Combine farro and water (or stock) in a pot. Bring to a boil, cover and reduce to a simmer until tender (about 20 mins.). Drain and cool.
In a small bowl whisk lemon juice and honey. Slowly whisk in the olive oil and season to taste.
In a large bowl, toss your roasted veggies de jour with farro, shredded Classic Romano and dressing. Season to taste. Garnish with lemon zest and extra cheese.
