Sartori® Classic Parmesan-Crusted Salmon

  • 1 deli bag or cup Sartori® Classic Parmesan cheese, shredded
  • 6 (5-oz.) fillets salmon
  • ½ cup Panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon zest, grated
  • 2 tablespoons olive oil
  • Salt & pepper, to taste
  • 2 tablespoons vegetable oil


  • Preheat broiler (or oven to 425˚F).
  • In a bowl, combine 1/2 cup of the Classic Parmesan, breadcrumbs, parsley, zest, seasonings and olive oil. Set aside.
  • Season fillets. Add vegetable oil to a cast-iron pan over medium-high heat. Place fillets, skin side down, in the pan and cook without turning until the fillets are nearly cooked to your liking (4 to 8 mins. depending on size of fillets).
  • Top each fillet with breadcrumbs and place under the broiler under golden brown.
  • Suggested Side: Broccolini (though any seasonal, green veggie will do)
