Sartori® Classic Parmesan-Crusted Salmon
- 1 deli bag or cup Sartori® Classic Parmesan cheese, shredded
- 6 (5-oz.) fillets salmon
- ½ cup Panko breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon lemon zest, grated
- 2 tablespoons olive oil
- Salt & pepper, to taste
- 2 tablespoons vegetable oil
Preheat broiler (or oven to 425˚F).
In a bowl, combine 1/2 cup of the Classic Parmesan, breadcrumbs, parsley, zest, seasonings and olive oil. Set aside.
Season fillets. Add vegetable oil to a cast-iron pan over medium-high heat. Place fillets, skin side down, in the pan and cook without turning until the fillets are nearly cooked to your liking (4 to 8 mins. depending on size of fillets).
Top each fillet with breadcrumbs and place under the broiler under golden brown.
Suggested Side: Broccolini (though any seasonal, green veggie will do)
