Cauliflower Mac and Cheese with Farmhouse Cheddar


Farmhouse Cheddar
Sartori® Cheese

Farmhouse Cheddar

1 block of Sartori® Farmhouse Cheddar, shredded

1 large Cauliflower, cut into florets

3 Tbsp. Olive Oil

Salt & Pepper, to taste

1 cup Heavy Cream

1 Garlic Clove, minced

¼ tsp. Cayenne


Step 1

Heat oven to 450 degrees. Toss the cauliflower with olive oil, season and roast for about 15 minutes or until golden brown.

Step 2

Transfer the cauliflower to a cast iron or 2-quart baking dish. Add almost all of the Farmhouse Cheddar (save a bit to sprinkle on top before baking), heavy cream, garlic, and cayenne to the dish. Stir to combine. Season to taste and top with remaining Farmhouse.

Step 3

Roast about 15-20 minutes or until the cream thickens and the cheese melts. Let sit for about 5 minutes before serving.
