Grilled Cheese with Heritage Cheddar
Sartori® Heritage Cheddar • Serves 4
About 8 oz. of chili

1 block Sartori® Farmhouse Cheddar, shredded
1 Avocado, cubed
2 Green Onions, sliced
½ cup Sour Cream
1 cup Corn Chips
1 Tbsp. Olive Oil
1 medium Yellow Onion, diced
2 Garlic Cloves, chopped
1 lb. Ground Beef
3 Tbsp. Chili Powder
2 Tbsp. Ground Cumin
2 Tbsp. Tomato Paste
1 ½ cups Beef Broth
1 (15 oz.) can Petite Diced Tomatoes
1 (16 oz.) can Red Kidney Beans, drained and rinsed
1 (8 oz.) can Tomato Sauce
In a stock pot over medium heat, sauté onion in olive oil until softened (3-5 minutes). Add garlic and cook another minute.
Add ground beef and sauté until browned and cooked (about 8 minutes). Stir in chili powder, cumin, and tomato paste. Stir and sauté another minute.
Add stock, tomatoes with juice, beans, tomato sauce, and season to taste. Bring to a simmer, lower heat and cook, uncovered, for 30-40 minutes. Remove from heat.
Serve with toppings.
