Savory, crispy, cheesy waffles topped with cinnamon-kissed sauteed apples, finished with a drizzle of sweet-spicy honey. This dish will make your kitchen THE hot new brunch spot!
This recipe will work in a Belgian waffle maker or a regular, simply follow manufacturer's instructions for amount of batter to use.
The honey can be made ahead and stored, chilled, in an airtight container.
For a kid-friendly version, swap the spicy honey for maple syrup or plain honey.
For the die-hard cheese lover, top these waffles with MontAmoré® Cheese Butter – simply combine a stick of softened butter and ¾ cup grated MontAmoré® in a food processor; process until smooth. Store covered in the refrigerator. Fantastic on biscuits, pasta, grilled seafood, corn, or grilled steak.
Spicy Honey:
1 cup honey
½ -1 teaspoon red pepper flakes
Sautéed Apples:
2 tablespoons butter
1 crisp apple such as fuji, cored, sliced ¼” thick
1 granny smith apple, cored, sliced ¼” thick
2 tablespoons sugar
⅛ teaspoon ground cinnamon
pinch salt
½ cup water
MontAmoré® Waffles:
2 cups all-purpose flour
3 teaspoons baking powder
¼ teaspoon salt
2 eggs
1 ¾ cups 2% milk
½ cup vegetable oil
1 ¼ cups shredded MontAmoré® cheese
Oil for waffle iron
To prepare spicy honey, combine the honey and red pepper flakes in a small saucepan over medium-high heat. Bring to a simmer. Remove from heat and transfer to a heatproof glass bowl. Let cool to room temperature.
To prepare the apples, melt the butter in a large skillet over medium heat. Add apples and sauté 1 minute. Add sugar, cinnamon, salt and water. Simmer 5 minutes or until apples are tender but not mushy, stirring occasionally. Remove from heat.
To prepare waffles, combine the flour, baking powder, and salt in a large bowl; set aside.
Lightly beat eggs in a bowl with a whisk; whisk in milk, and then oil until smooth.
Add the wet ingredients to the dry; whisk together until combined. Switch to a spatula and fold in the cheese.
Heat waffle iron according to manufacturer's directions. Lightly brush iron with oil.
Add batter amount to iron according to manufacturer's directions. Cook 3-4 minutes or until browned and crisp. Repeat with remaining batter. Serve topped with sautéed apples, spicy honey, and MontAmoré® Butter if desired.
