⅓ cup Greek yogurt
⅓ cup mayonnaise
1 tsp. Dijon mustard
1 tsp. fresh lemon juice
½ tsp. soy sauce
1 small clove garlic, crushed
1½ cups Sartori® Classic Shaved Parmesan, divided
10 cups chopped or torn romaine
2 cups torn radicchio
1 cup croutons, plain or flavor of choice
½ cup sliced radishes
½ cup pitted black olives, halved
Freshly ground black pepper, to taste
To prepare dressing, combine the first 6 ingredients and half a cup of the Parmesan in a food processor; process until smooth. Transfer to a small bowl, cover and chill until use. Can be made up to a day ahead.
Combine romaine and radicchio in a large bowl; drizzle with half the dressing and toss well to coat. Transfer the salad to a platter or divide among 4 plates.
Top evenly with the croutons, radishes, black olives and remaining cup of Parmesan. Drizzle with the remaining dressing and sprinkle with pepper to taste. Serve immediately.
